The humble carrot has been known as a medicinal plant as well as a culinary one, at least since the time of Dioscorides (1st Century AD).
The essential oil which is distilled from the seeds is pale yellow in
colour, with the characteristic smell initially sweet and fresh but a
tenacious earthy undertone a number of oriental perfumes contain carrot
seed oil.. The true distillation is from the wild carrot sometimes
called Queen Annes Lace.
Carrot has a powerful tonic action on the liver and gall-bladder, and is used in cases of jaundice and other liver disorders. Carrot oil has antimicrobial, antioxidant, and anti-inflammatory properties that may improve skin health and appearance.
